Secondly, there are the changes which substances undergo in their innermost structure: like the transformation of wood into charcoal, of the constituents of soil and air into the stems and leaves of plants, and a multitude of other simi lar alterations of different degrees of complexity. Changes of the first class are called physical changes, while the others are known as chemical; and it is with the latter that the science of chemistry has to do.
