Being a vegetarian who has chosen a low-carb lifestyle, I simply cannot convey what a find this book was. All the other vegetarian "low-carb" books (except Rose Elliot's) simply miss the concept of "low-carb!" This one, thankfully, does not!
I have tried many recipes to date and loved each and every one. They are all truly low-carb and so very delicious. I am not a "sprouts and tofu" kind of vegetarian...but a cheese, eggs, pasta and all things tasy kind of vegetarian...so finding a book that didn't focus on types of vegetables I despise or raw tofu has been wonderful. The spinach and ricotta gnocchi? Wonderful! The luxury cauliflower cheese? Fabulous! This author truly gets low-carb and vegetarianism and has married them together for an outstanding resource for lowcarb vegetarians and omnivores alike. I highly recommend his book.
