Dies gilt namentlich fiir den Fall, dass es zu einer Zeit genossen wird, zu der der Magen nicht leer ist, sondern noch Speisereste und Magensaft enth�lt. Wird es bei vollkommen nuchternem Zustande genossen, so dauert die Verdauung nicht blos l�nger, sondern es bewirkt auch leicht Erbrechen. -das fl�ssige Eiweiss der frisch gelegten Hiihnereier erfordert zu seiner Verdauung jedenfalls eine nicht geringe Menge von Magensaft und einen nicht unbetr�chtlichen Gehalt desselben an Saure und Pepsin. Soll das Eiweiss in der angegebenen Zeit verfl�ssigt und umgewandelt werden, so muss es mit der 10 - bis 20fachen Menge Magensafts in Ber�hrung treten und es muss dieser etwa - 2% S�ure und Pepsin enthalten. Das rohe Hohner eiweiss d�rfte mithin bei allen denjenigen Personen, wel che eine geschw�chte Verdauung haben, insofern diese in einer zu geringen Menge des Magensafts oder in ei nem zu geringen Gehalt desselben an Pepsin und Saure ihren Grund hat, als Nahrungsmittel entweder gar nicht nicht oder im n�chternen Zustande genossen werden.
