Excerpt from The Way We Did at Cooking School Syrian hash (kabab).-she prepared a hash which she called Kabab, using three-quarters of a pound of mutton out fine, one-heaping tablespoonful of chopped parsley, one onion chopped fine one teaspoonful of cinnamon, one tablespoonful of our, one and one half teaspoonfuls of salt, one-fourth of a teaspoonful of pepper, and about one-fourth of a cupful of finely chopped almonds were added. All the ingredients were mixed well together and formed into cakes, which were placed in a baking pan, and one-third of a quart can of tomato juice poured over them, and the pan put in the oven for thirty minutes, or until done. Of course the length of time would depend somewhat on the tenderness of the meat. Sometimes they chop pine nuts or almonds very fine and place them in the center of each cake, or the pine nuts are very good with chicken, prepared as above, with the tomato sauce.
