I'm a gluten-free vegan with a pretty demanding palate. I need foods that are flavorful and quick and easy to prepare but that are also nutritionally dense. I checked this book out of the library at first, but after having prepared a few of the soups, I just knew I had to have it in my arsenal. I guess a lot of people don't think of soups as complete meals, but Ms. Madison's creations truly are, and the combinations of vegetables and flavors are both familiar and delightfully surprising. My husband and I especially loved the Black Bean Soup with Coconut Milk and Lime. Because the recipe called for using canned black beans, we had dinner on the table in a half an hour--and we practically ate the whole pot in the same night! Even if you don't think you're a big soup fan, you will be after a few of Ms. Madison's easy recipes, and you'll probably be surprised at how much soup you'll be eating after buying this book!

I first encountered Deborah Madison's recipes in an issue of Food and Wine Magazine I was browsing through at the library--As an avid long-time cook, I could tell that the recipes would be delicious, and they are!! Vegetarian food can be boring and lacking in taste, but Deborah Madison has an amazing talent for imagining wonderful taste combinations--She lives in New Mexico, and brings her knowledge of that culture to the table, as well as Thai, and others. She usually adds a wonderfully flavorful and not too difficult-to-make garnish. The photos are beautiful and inspiring. Here are some of the soup names: Black Bean Soup with chile, coconut milk, and lime--Lentil Soup with cumin, cilantro, and chard--Roasted Squash, Pear, and Ginger Soup (garnished with carmelized pear-- She has written several other well-received cookbooks which have received important awards.
