Die Qualit???tsmerkmale von Tamarindenleder (Trocknungsverh???ltnis, Rehydratationsverh???ltnis, Textur, S???uregehalt, Zucker, gesamte l???sliche Feststoffe und nicht-enzymatische Br???unung) wurden nach der Verarbeitung von Tamarindenleder untersucht, das sechs Monate lang bei Raumtemperatur (25 - 30 ???C) gelagert wurde. W???hrend der Lagerung wurden auch die mikrobiologischen Eigenschaften des Leders untersucht. Tamarindenfr???chte waren reich an Gesamtzucker, reduzierenden Zuckern, K und Ca (37,33 %, 36,5 %, 362 mg / 100 g bzw. 149 mg / 100 g) und arm an Protein und Fe. Das optimale Verh???ltnis von Wasser zu Tamarindenfr???chten f???r den Aufschluss wurde mit 1: 4 und einer optimalen Einweichzeit von 3 Stunden ermittelt. Der Tamarindenbrei erwies sich als stark sauer (7,6 % S???uregehalt als Weins???ure).
