La ch???a (Salvia hispanica L.) es una semilla nativa del sur de M???xico y norte de Guatemala. La ch???a junto con el ma???z, el frijol y el amaranto, fueron cultivos importantes para las civilizaciones precolombinas de Am???rica, pero actualmente se ha recuperado el inter???s alimentario por su alto valor nutrimental, pues es una fuente de ???cidos grasos Omega-3, prote???nas, antioxidantes y fibras solubles e insolubles. La ch???a, como otros granos, debe ser almacenada para usarse cuando sea necesario. Pero se ha comprobado que el almacenamiento deficiente de granos y semillas deriva en un deterioro paulatino y p???rdida de la calidad sanitaria, alimentaria y agr???cola. La p???rdida de la calidad nutrimental, provocada por un mal almacenamiento, se ha investigado en otros granos como el frijol y el amaranto, pero respecto a la ch???a no se ha estudiado. Es por eso que, en este trabajo se propone estudiar el efecto de un almacenamiento inadecuado de la semilla de ch???a sobre su calidad nutrimental.
