Shannon Hayes is the chef and CFO of Sap Bush Hollow Farm, LLC. She and three generations of her family raise grass-fed and pastured meats, operate Sap Bush Café (a farm-to-table and neighbor-to-neighbor experience in the Catskill mountains), as well as vacation rentals, long-term rentals, and an online general store. Hayes holds a PhD in sustainable agriculture and community development from Cornell University and makes it a life goal to spend a few hours in the woods each day doing nothing except pondering the mysteries of the universe.
