When Bill Collison was 22 he turned a shed in Lewes, East Sussex, into a small greengrocer's. Sensing a hole in the market, Bill began to open cafes in other South-Eastern locations, starting with Brighton and moving on to Reading, Cambridge and Covent Garden.
