Home Economics got me to try cooking but when I really wanted to learn how to cook this was the first cookbook I bought. It is exactly what the name describes " Easy basics for good cooking"! It has it all, from every comfort food to fancy feasts with everything in between and how to do it step by step. It shows you all the equipment you need for your kitchen, describes terms you would find in recipes. Emergency substitutions, cuts of meats, how to cut up a chicken, types of cheeses and tons more. It has great easy to follow photos too! I can credit this book as the one that got me into the kitchen and I haven't been out since. I wore mine out and have been looking for its replacement for years. I finally found it on Alibris and at a great price too.
