Good basic Japanese cooking. Subtitled "japanese recipes for american cooks," this is an elegant, utilitarian volume that will tell you how to make dashi, basic noodle and rice dishes, etc. My favorite recipes are the "Hot Moon Gazing Soba" and "Healthy Root Vegetables" although I refer to it often for the soup stock recipes. I have bought several copies of this book as gifts for people who like japanese cooking and well-designed books. Nice illustrations by Etienne Delessert reproduced in black and white.
