Her recipes were always bursting with West Indian flavors, awakening the palate and leaving me wanting to cook just as good as her. Many years ago I asked her to create a cookbook that I could refer to and emulate her style of cooking. The book was homemade and throughout the years I have used it to entertain many guests. I recently went on a medical mission trip with my mother to our native country Dominica, after it was devastated by a category 5 hurricane. We were able to medically serve the locals and meet other fellow countrymen. It was then through conversation, while talking with others about the richness of West Indian culture and Dominican food that the book was reborn. This cook book is very different to other cook books because of the passion that drives it, as it is made from the heart. I know that you will enjoy my mom's cooking as much as I do.
