Lorna Sass has written an encyclopedia of whole food vegetarianism, details right down to which beans should be cooked with or without salt. That is not to say that the recipes are not creative. The influences are from all over the world and always have lots of flavor. I would highly recommend this cookbook for beginning vegetarians but would never be without this as a seasoned vegan cook.
