In addition to all of the cocktail recipes, George Winter included chapters on the duties of a bartender, stock required in a saloon, and excerpts of the laws of New York state regarding liquor. As many of his cocktail recipes say, "serve with a smile," his philosophy regarding his bartending duties is nicely summarized by this quote: "In short, he should sympathize with those who are not feeling well, appear jolly to those who are apparently light-hearted, and in general use good judgment in his conversation with all with whom he comes in contact while in the discharge of his duties."
