This was a good book and has good recipes. However, I discovered that the flours and starches used instead of wheat flours were not only harder to cook with, but they also are so refined that they triggered sugar reactions. I'm hypoglycemic, and this won't work for me. For someone who requires non-gluten foods, but does not have a sugar complication, this is a good book.
