I received this book for Christmas a couple of years ago and it has earned a prominent place in my arsenal of cookbooks. Though I have not ventured far out of the main dish chapter, I have found it to be indispensable in planning fully nutritious vegetarian meals. I would also recommend this to fledgling vegetarians who want to branch out from the training wheels that are cheese and pasta dishes. Using this book will truly and fully acquaint one with the wonderful variety to be found in lentil, bean, and nut-based dishes, and all the fresh vegetables and grains that go with them. Many of the dishes are also vegan or vegan adaptable just by nature of the cultures from which they come, where eggs and dairy are used sparingly, so this book is suitable for those with lactose or egg intolerances, as well as those who are vegan by choice. A note: Because these dishes were collected from lay people around the world rather than created in test kitchens in the West, once in a while the instructions are a little slapdash. This has only ever slowed me down by a minute or two at the most. By far the majority of the recipes don't have this problem, but a few do and these sometimes require the judgment of the cook to determine what the recipe probably means.
