Now, the other morning I was fortunate enough to receive a copy of a delightful little work, from the pen of Mr. C. E. Hawker, entitled "Chats about Wine." Its object is the modest one of trying to "awaken an interest in the subject among those who have not hitherto given much thought or attention to it," and to emphasize the importance of obtaining one's supplies from proper and reliable sources. The book is neither tradey nor dull, and it will be read with relish by paper traders, as well as others, who have an intelligent interest in the subject, or a desire to acquire one. The connoisseur and the man, especially if he be of modest means, who desires to commence keeping a small cellar, will find it a pleasant guide free from all technicalities, and a work calculated in other respects to win his approval. The author longs for a recrudescence of a taste for wine rather than for the present preference for spirits, which latter are more harmful to the cause of true temperance, and a great deal of commonsense is expressed in pleasant diction. Definitions of wine are as numerous as those of genius, and as a rule just as near or as far, from the truth. Mr. Hawker asks, "What is Wine?" and reminds us that: A flask of wine, like a bottle of ginger beer, contains alcohol, but it contains many other things as well. First and foremost nearly all its bulk consists of rain-water, exquisitely filtered and distilled by the kindly sun and subtly enriched with vitality by the silent alchemy of Nature. The man who drains a whole bottle of sound wine absorbs only a single glass of alcohol: and it must always be remembered that the alcohol of natural wine differs from the alcohol of the chemist's laboratory as much as a bee's honey differs from the chemist's saccharine or glucose. It follows, therefore, that a sensible wine-drinker ...knows very well that his trusty beverage is not mere alcohol, but alcohol modified and corrected by the other and more abundant constituents of wine. Then Mr. Hawker lets in light upon the pitfalls into which the inexperienced buyer of wines is liable to stumble at the hands of unscrupulous wine merchants and hotel and restaurant proprietors, and upon various nefarious "tricks of (he trade." which are not lacking in cunning and ingenuity. It all makes very pleasant reading, as also do the several chapters on "Doctors and Wine" and on the wines of France, Germany, Spain, Portugal, Madeira, Italy, Austria, Hungary, Australia and California. My readers will thank me for the recommendation if they peruse Mr. Hawker's little volume. ="The World's Paper Trade Review," Vol. 48 [1907]
