I was skeptical about what good old Betty Crocker would produce in the way of vegetarian cookery. But, my local library did not have any of her vegetarian cookbooks, and the price was right, so I ordered 3. I was delightfully surprised. All of the ingredients are easy to find in local groceries; the list of ingredients is usually pretty short. The recipes are easy, tasteful, and economical. In fact, this is becoming my favorite vegetarian cookbook.
