I'm thrilled to learn this book is available! I'm looking at my tattered copy here--strictly damaged goods from all the times I've used it since 1970 when it was published. Even though it's badly battered, fragmented pages and all, I return to it frequently when other cookbooks fail to deliver. I usually realize I should have gone there first. I do have to update it in my own mind to accommodate the microwave and make recipes more heart healthy, though this is surprisingly rare. (It is--yikes!--38 years old.) Strengths: separate recipes for fresh, frozen & canned vegetables; good info on the properties of individual vegetables; emphasis on recipes that don't require lots of ingredients or elaborate prep; casserole & main dish recipes; salads and dips; inclusive coverage. If it's a vegetable it's in herte. I wanted to pick out some of my faves but there were too many and besides, I got distracted looking through it by all the recipes as yet untried.
