In studying food values, it is necessary to be able to translate percentage quickly into terms of weight and vice versa. This is simple if it be clearly understood at the outset that percentage means parts per 100 parts, without regard to whether these parts be taken by English or Metric system. Cows' milk has the following percentage composition: Protein Fat Carbohydrate 3.3 per cent 4.0 per cent 6.0 per cent If we take as the basis for calculation a unit of weight, as one pound, we shall find the following weight of protein, fat and carbohydrate yielded by this amount of milk: Protein Fat Carbohydrate 0.033 pound 0.04 pound 0.05 pound The scientific unit of weight is the gram, and the food-stuffs are commonly reported in terms of this unit. In one gram of milk there will be by weight, according to the above analysis: Protein Fat Carbohydrate 0.033 gram 0.04 gram 0.05 gram in other words, dividing the figures representing the percentage composition by 100 (i. e., moving the decimal point two places toward the left) will give the weight in grams of protein, fat and carbohydrate in one gram of any food material. The number of grams of protein, fat or carbohydrate in one ounce of any food material may be found most easily by multiplying the values for one gram by 28.35, the number of grams in one ounce.
