White is a no-nonsense, no-frills guy. But he is not at all hesitant to share his vast knowledge about foods and recipes; not just the recipes but historical background and how to buy, store and prepare the food.
White's recipes, too, are no-nonsense. Basic common ingredients and clear descriptions of preparations. He provides many illustrations showing how to clean and cut fish and shellfish as well as how to cut and prepare non-seafood items.
If I were told I had to throw out all but one of my cookbooks, this is the one I'd keep.
